… is cooking away right now. So very simple. Making my house smell bad ass.
3 lbs Beef Shank sliced about an inch or so thick (or to taste) – i got the good grass fed stuff from my beef dude.
10-15 cloves garlic- peeled but whole ( i used 15)
2-4 tbsp coarsely ground black pepper (and of course I used 4 tbsp)
1 bottle of Chianti
combine all ingredients, cover,cook slow and low (i’m using the crockpot. )

Made another batch of sausage and cheese balls. Used half the recommended dose of cheese. As far as I am concerned – a pound of cheese is enough for any recipe. 2 lbs extra hot local pork sausage, 1 lb extra sharp cheddar and maybe a cup and a half of almond meal (instead of flour or bisquik). Looks like the almond meal doesn’t absorb anywhere the amount of grease that flour does. My house, NC
