So there's this...

.. Tibetan Cheese Soup called Churu. I made it before and it was pretty damn good. Here’s the ingredients for it:

  • ½ onion, chopped
    oil for frying
    1 tomato
    1 jalapeño chili
    2 tablespoons blue cheese or Churu (which is a Tibetan Pungent cheese)
    ¼ lb. chopped beef
    ¼ teaspoon paprika (optional)
    ¼ teaspoon garlic, chopped
    ¼ teaspoon fresh ginger, chopped
    ¼ teaspoon ground emma (Sichuan pepper)
    5 cups water
    ¼ cup cornstarch

All of this is well and good, but for the cornstarch and the fact that it is a lot more liquid than meat. So i decided to flip it around and make what i am calling Tibetan Taco meat (even though I didn’t put it on tortillas)

I used:

½-1 onion chopped

1 Lb Ground Bison

a bunch of garlic

a bit of ginger

smoked paprika

smoked black pepper

sricicha (instead of jalapeno)

Szechuan Pepper

several ounces of blue cheese

1 welll drained can of diced tomatoes (i like the roasted ones with garlic)

Butter

Saute the onions in good butter until soft/translucent in a big skillet

add garlic

mix sriracha and szechuan pepper into meat

add meat to skillet

add ginger, paprika, pepper, more szechuan pepper etc

brown meat (adding more sriracha and garlic as needed)

keep stirring, mixing with spatula

add drained diced tomatoes

allow some of the juice to cook out, keep stirring

add blue cheese

mix in as the cheese melts

serve
